BOMBAY CURRY CHICKEN SALAD
Use ½ to 1 package of Wild Spice Bombay Curry, to taste
1 cup celery, chopped
1½ cup green grapes, halved
4-6 green onions, chopped
2 cups chicken, cooked and cubed
In a small bowl, mix the mayonnaise and Bombay Curry until well blended.
In a large bowl, toss the celery, grapes, onions and chicken together.
Stir the curry mayonnaise mixture into the ingredients in the large bowl and refrigerate until chilled.
Serve on a bed of greens garnished with chopped peanuts for a refreshing salad.
Spread on a slice of whole grain bread and top with a fresh leaf of romaine for a delicious sandwich.
